2 tbsp olive oil
Half a courgette, grated
Half a small onion, chopped
Couple of cloves of garlic, minced
2 tbsp green pesto
Salt & pepper to taste
What to do:
Heat the olive oil and fry the onion and garlic over a medium heat for about 5 minutes until softened.
Add the courgettes and fry for another 2-3 minutes.
Stir in the pesto and salt and pepper. Mix well.
Meanwhile, cook the pasta according to the packet instructions. Drain and return to the pan.
Add the courgette mixture to the pasta, stir well and serve.
