150g lentils, washed thoroughly
300ml vegetable stock
Half an onion, chopped
Couple of cloves of garlic, minced
200ml tinned tomatoes
1 tsp curry powder
Half tsp ground ginger
Juice of half a lemon
Salt & Pepper
What to do:
Put lentils, stock, onion and garlic into a saucepan. Bring to the boil then reduce to a simmer. Cook for 12 minutes.
Add the tomatoes, curry powder and ginger. Stir well, bring to the boil again and simmer for another 10-15 minutes.
When the lentils are completely soft, add the lemon juice and stir well.
Season to taste.
