2 tablespoons olive oil
Half an onion, chopped
Couple cloves of garlic, minced
225 kale, stems removed and leaves chopped
200g tin of chopped tomatoes
175ml vegetable stock
1 tsp cumin
1 tsp turmeric
200g red beans, drained and rinsed
Salt & pepper to taste
What to do:
Heat oil in a pan over medium-high heat.
Add the onion, garlic & kale. Cook whilst stirring for about 5 – 7 minutes until the onion is transparent and the kale wilts & reduces in volume.
Reduce heat. Stir in the tomatoes, stock, cumin and turmeric. Simmer for about 1 hour until the kale is soft. Stir in the beans and continue simmering for about 10 minutes until they are heated through.
Add salt & pepper to taste
