1 tbsp unsalted butter
Half an onion, chopped
Couple cloves of garlic, minced
1 tsp curry powder
1 tsp turmeric
Salt & pepper
300g pumpkin cut into bite-sized chunks
1 small red potato cut into bite-sized chunks
75g frozen peas
150ml vegetable stock
What to do:
Heat the butter in a large pan over medium heat. Add the onion and garlic and cook until golden-brown, about 5 minutes.
Stir in the curry powder, turmeric, salt, and pepper.
Add the pumpkin and potatoes and cook for 5 minutes, stirring frequently.
Pour in the stock, chuck in the raisins, cover, and reduce heat to medium.
After 15 minutes, add the peas.
Replace cover and continue to cook until the pumpkin and potatoes are tender. This should take 5 to 10 minutes.
