2 tbsp olive oil
Half an onion, chopped
Couple of cloves of garlic, minced
50g brown rice
200ml vegetable stock
100g broccoli florets
50g mushrooms, quartered
30g Cheddar Cheese, grated
Quarter teaspoon of Turmeric
Salt & pepper to taste
What to do:
Put the broccoli into a pan of boiling water and cook for about 10 minutes until it starts to soften. Drain and set aside.
Heat the oil in a medium saucepan and cook the onion, garlic & mushrooms for 3-4 minutes until soft, stirring all the time. Mix in the Turmeric, Salt & Pepper.
Add the rice and the stock, bring to the boil. Reduce the heat to medium-low. Cover the pan and simmer until all the liquid is absorbed Keep stirring now and again so that it doesn’t stick. This should take about 20/25 minutes.
Spoon the rice onto a plate and top with the broccoli and grated cheese.
