2 tbsp olive oil
1 shallot, finely chopped
2 garlic cloves, minced
50g mushrooms, sliced
1 small free-range egg, beaten
25g cheese, grated
What to do:
Heat the oil and fry the shallot for 5 minutes until soft and golden. Add garlic and fry for another minute.
Add the mushrooms and cook for 3-4 minutes.
Meanwhile, cook the spaghetti according to the packet’s instructions. Drain and return to saucepan.
Mix the beaten egg into the saucepan with the spaghetti, stirring well to make sure you cover all the strands.
Next add the mushroom and shallot mix, along with the grated cheese.
Season with salt & black pepper to taste.
