80g broccoli florets
80g green beans
1 tbsp sunflower oil
Half a small red pepper, finely sliced
70g mushrooms, sliced
100g red beans, drained and rinsed
2 tbsp Soy sauce
Half tbsp Balsamic vinegar
What to do:
Put the broccoli & beans into a pan of boiling water. Bring back to the boil and simmer for 5 mins. Drain.
Add the noodles to a pan of boiling water. Bring back to the boil and simmer for 4 mins. Drain.
Heat the oil and cook the pepper and mushrooms for about 4 mins.
Add broccoli, green beans, noodles, red beans, soy sauce and vinegar.
Stir fry until heated through.
