Meat-free balls with tomato sauce

Ingredients:

For the tomato sauce:
1tbsp olive oil
200g tinned chopped toms
Half an onion, chopped
Couple of cloves of garlic, chopped
Half a green pepper, de-seeded and chopped
Pinch of Cayenne pepper
Salt & pepper to taste

For the meat-less balls
200g red or black beans, drained and rinsed
120g mushrooms, finely chopped
60g breadcrumbs
small egg, whisked
Half tsp dried herbs of your choice
salt & pepper to taste

What to do:

For the Sauce:
Heat the oil in a frying pan over a medium heat.
Add the onions, garlic and pepper and cook for 5 minutes or so until softened.
Add the Cayenne pepper and seasoning.
Stir well and simmer for 15/20 minutes until the sauce thickens.

For the Meat-less balls:
Preheat oven to 200 deg celsius (fan oven 180, Gas Mark 4)
Put the beans, mushrooms, breadcrumbs, egg, herbs & seasoning into large bowl.
Mash everything together until thoroughly combined.
Grease a muffin tin with oil or butter
Roll mixture into balls and place in muffin tin. If you’re using a regular sized muffin tin, you should get 6 balls out of this. Plenty for seconds!
Cook for about 15 minutes, but keep checking as you don’t want them to dry out.
