Peanut & tomato stew


1 tablespoon vegetable oil
1 small red onion, finely chopped
3 cloves garlic, chopped
1 green pepper, diced
25g crushed peanuts
2 large tomatoes, chopped
200ml water
salt and cayenne pepper to taste

What to do:

Heat the oil in a saucepan and fry the onion, garlic, green pepper and peanuts over a medium heat for a couple of minutes.
Add the tomatoes, water, salt and cayenne pepper.
Bring to the boil, then reduce the heat and simmer for about 1 hour.
Serve with rice or noodles
