Vegetarian recipe

Sweet & sour broccoli


For the sweet & sour sauce:
1 tbsp sunflower oil
Half an onion, chopped
2 cloves garlic, chopped
1 tsp fresh ginger, grated
200g pineapple chunks (I used tinned)
3 tbsp balsamic vinegar
60ml tomato sauce
1 tbsp soy sauce
half tsp honey
60ml water
2 tsp cornflour

For the broccoli:
200g broccoli, cut into florets
1 tbsp sunflower oil
2 cloves garlic, chopped
Salt and pepper to taste
1 tsp turmeric
100ml pineapple juice

What to do:-

For the Sauce:
Heat the oil in a saucepan over medium heat.
Add the onions and cook for 2 minutes until softened.
Add the ginger, garlic, pineapple, vinegar, tomato sauce, soy sauce and honey.
Reduce to a simmer and cook for about 3 minutes, stirring all the time.
In a small bowl, mix the water and the cornflour until smooth. Add to the sauce and bring to the boil. Cook for 1 minute and turn off the heat. Set aside until ready to eat.

For the broccoli:
Heat the oil in a frying pan over medium heat.
Add the garlic and let brown for a few seconds.
Chuck the broccoli florets into the pan and cook until softened and browned. This should take roundabout 10-15 minutes, depending on your hob and how al dente you like it. Just keep checking the texture.
Add salt, pepper and turmeric. Mix well.
Next add the pineapple juice and heat through.
Pop onto a plate and pour the sweet and sour sauce on top. Serve with rice or noodles.
