Pay special attention to unsought inspirations at this time. They have something wonderful to offer you, but it is up to you to bring them into reality.

Egyptian lentils and couscous…for one!!!!

Egyptian lentils and couscous

Egyptian lentils and couscous

Ingredients:
100g dried lentils, rinsed well
2 tbsp sunflower oil
Half an onion, chopped
Clove or two of garlic, chopped
Quarter tsp of turmeric
400g tinned tomatoes
1 tsp ground cumin
Pinch of cayenne pepper
Salt & pepper to taste
40g couscous prepared as per the packet’s instructions.

What to do:
Cover the lentils in a heavy-based pan with water and boil for about 10 minutes. You will need to skim the surface with a spoon now and again, and may need to add water.
Reduce the heat and simmer for 30-40 minutes. Drain and set aside.
Heat 1 tbsp sunflower oil in a large pan and fry the onion and garlic over a medium heat for couple of minutes, then stir in the turmeric.
Next pour in the tomatoes. Bring to the boil whilst stirring. Reduce the heat and simmer for 10-15 minutes, stirring occasionally, until the sauce thickens a bit.
Heat 1 tbsp sunflower oil in a frying pan. Stir in the cumin and cayenne pepper and fry for about 30 seconds, stirring all the while. Now tip in the lentils, stir and season with salt & pepper to taste.
Spoon the couscous onto a plate, pile the spiced lentils on top of that, and top it all off with the tomato sauce.

Aubergine Hash

Aubergine Hash with Spicy Tomato Sauce

Ingredients:
For the aubergine hash
Half an aubergine, diced
Half an onion, chopped
Couple of cloves of garlic, chopped
Half tablespoon finely chopped black olives
2 tablespoons olive oil
Juice of half a lemon
Slice of bread, broken into fine crumbs
Teaspoon dried herbs (I used oregano)

For the sauce
Half an onion, chopped
Half a green pepper, chopped
200g tinned chopped tomatoes
Pinch of Cayenne Pepper
Teaspoon of dried Cumin (optional)

What to do:-
Heat 1 tablespoon of oil in a large frying pan.
Add the aubergine chunks, onion, garlic and olives.
Cook for about 15 minutes.
Once the aubergines are soft, add the lemon juice, breadcrumbs and herbs.
Stir well and cook for a further 5 minutes.

Meanwhile, fry the onion and green pepper in a frying pan over a medium heat for about 5 minutes until they start to soften.
Add the tinned tomatoes, cayenne pepper and cumin.
Stir well.
Simmer for 10/15 minutes until the sauce is nice and thick.

Green Man often shows up when you are thinking of making a change – new job, house move, lifestyle change – but have been hesitating as you think it may cause a confrontation.

He is recommending that you take some time out to be in nature where you will find more clarity. He could send you messages in the form of an “a-ha” moment, or through dreams, gut feelings, songs on the radio etc.

You are being inspired to move out of your comfort zone and onto ever-greater accomplishments. Beware now of people trying to “put you down” even if they say it’s for your own good. With the support of Green Man, you are capable of great things right now. It’s just that not everyone may be able to handle that!

 

Courgette Sauté…for One!!!

Courgette Sauté

Courgette Sauté

Ingredients:
1 tablespoon olive oil
Half an onion, sliced
Clove or two of garlic, chopped
1 tomato, chopped
400g courgette, cut into slices
Half a green pepper, deseeded and chopped
40g rice, uncooked
75ml vegetable stock
Half teaspoon of turmeric
Salt & pepper to taste

What to do:
Fry the onion in the olive oil in a pan for a couple of minutes until soft. Add the garlic, tomato, courgette and green pepper.
Season with salt, pepper and turmeric. Stir well.
Reduce the heat, cover the pan and simmer for 5 minutes.
Stir in the rice and vegetable stock.
Cover again, and cook over a low heat for about 20 minutes.
