100g mushrooms, sliced
75g courgette cut into thin strips
1 tbsp vegetable oil
Half an onion, sliced
Clove or two of garlic, chopped
Small piece of fresh ginger, peeled & finely chopped
Half a red pepper, cut into small wedges
1 tbsp red wine
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp sweet & sour sauce
Half tsp cornflour
1 tbs sesame seeds
60g packet noodles
What to do:
Cook the noodles as per the packet’s instructions.
Heat frying pan until it is hot, then add the vegetable oil. Add the mushrooms, onion, garlic, ginger, red pepper and courgette. Stir fry for 2-3 minutes.
Add the wine, sesame oil, sweet & sour sauce, & soy sauce. Stir well and heat through.
Mix the cornflour with half tablespoon of water, stir into the sauce and heat until just thickened.
Pile the noodles onto a plate, spoon the sauce over the top and sprinkle on the sesame seeds.
