1 tbs olive oil
Half an onion, chopped
Clove or two of garlic, chopped
Half a red pepper, deseeded and chopped
300g tinned tomatoes
40g mascarpone or soft cheese
250g pack gnocchi
What to do:
Heat the oil in a large pan and fry the onion, pepper and garlic for 5 minutes until soft.
Add the tomatoes and gnocchi.
Stir well and simmer for 10-15 minutes, stirring occasionally until the gnocchi is soft and the sauce is nice and thick.
Stir in the mascarpone/soft cheese and cook for 2 minutes more.
Season with salt, black pepper and cayenne pepper if you fancy.
