1 tbsp olive oil
Half an onion, chopped
Clove or two of garlic, chopped
Small piece of ginger, grated
Quarter tsp turmeric
Half tsp ground cumin
Half tsp curry powder
Salt and black pepper to taste
100g tinned chopped tomatoes
Quarter tsp runny honey
200g cauliflower florets
1 potato, cut into bite-sized chunks
What to do:
Heat the oil in a large saucepan.
Fry the onion, garlic, ginger, turmeric, cumin and curry powder over a medium heat for a couple of minutes.
Stir in the tomatoes and honey.
Next add the cauliflower, potato, salt and pepper.
Mix well, cover the pan and cook on a low heat until the veggies are tender (about 30 minutes), stirring occasionally.
Serve with rice or naan bread, chapati etc
Whilst this is supposed to be a dry curry, keep an eye on it as it is cooking. I added a bit of water when it seemed to be drying up too much.
Would also be tasty served with a dollop of natural yoghurt.
