Chilli Sin Carne

Ingredients:
1 large carrot, grated
Quarter of a medium courgette, grated
50g pre-cooked lentils (the ones you get in a tin or jar)
100g tinned white or red beans
85g sweetcorn
100g tinned chopped tomatoes
Half a small green pepper, deseeded and chopped
Half an onion, chopped
Clove or two of garlic, chopped
Quarter tsp of chilli powder
1 tablespoon olive oil

What to do:
Heat the oil in a large saucepan. Fry the onion, garlic, pepper, carrot, courgette and chilli for about 5 minutes until they start to soften.

Add the tinned tomatoes and cook for a further 2-3 minutes. Add the beans, sweetcorn and lentils. Stir thoroughly.

Cover the pan and simmer for about 20 minutes.

Top Tip:
You can even use good old-fashioned baked beans in this recipe!!
