1 x 200g jar/tin red beans
1 x 200g jar/tin chickpeas
Half an onion, chopped
Clove or two of garlic, chopped
2 tablespoons of olive oil
Pinch of Cayenne Pepper
200g tinned chopped tomatoes
1 teaspoon of tomato puree
1 vegetable stock cube, crumbled
200ml water
1 teaspoon honey

What to do:
Rinse the beans and chickpeas together in a colander and set aside.
Fry the onion and garlic over a moderate heat for 5 minutes or so, until the onion is soft.
Add the cayenne pepper, chopped tomatoes, tomato puree, stock cube, honey and water.
Stir well and simmer for 10/15 minutes until the mixture is nice and thick.
Chuck in the beans and chickpeas, stir well and heat through for 5/10 minutes.

Top Tip:
Serve with a simple side salad or rice.
