As always, these recipes are for a single serving…but usually quite a generous one at that!!

It will take you about 30/35 minutes to prepare this.


2 tsp olive oil
half an onion
clove or 2 of garlic
25 grams (1 oz) quinoa
3 floz (90 ml) vegetable stock
quarter teaspoon of curry powder
pinch of cayenne pepper
salt & black pepper to taste
1.5 oz or 45 grams of tinned sweetcorn
200 gram tin/jar of red beans, drained and rinsed well.

What to do:

Heat the oil over a medium heat and sauté the onion and garlic for 3-4 minutes.
Mix the Quinoa into the pan and cover with the stock. Stir well.
Add curry powder, cayenne pepper and salt & pepper.
Bring to the boil, then cover the pan, reduce the heat and simmer for 20 minutes.
Stir in the sweetcorn and mix in the beans.
Warm through…and enjoy!!


Try black beans or kidney beans instead of red beans. Or substitute the curry powder for ground cumin. Go wild! This recipe lends itself beautifully to improvisation. 😉
