Caponata

Ingredients:

3 tbsp olive oil
Half an onion, chopped
Couple cloves of garlic
Half an aubergine, diced
1 courgette, diced
Half a red pepper, de-seeded and chopped
10g green olives, pitted and halved
Half tbsp capers, drained and rinsed
2 tbsp white wine vinegar
Salt & pepper

What to do:

Heat the oil in a large deep frying pan over a medium heat. Add the onion and garlic and fry for 5 minutes.

Stir in the aubergine and courgette, cover and cook for 15 mins, stirring occasionally. Add the red pepper and cook for a further 10 mins until tender.

Mix in the olives, capers and vinegar and season with salt & pepper. Cook, uncovered for a further 5-10 mins until most of the liquid has evaporated.

Serve hot or cold.

Herne the Hunter

Sometimes, Herne the Hunter shows up when you feel like you have been being carried in a direction you don’t like…as though you’ve just been doing what other people expected you to do. The future may be feeling a bit uncertain, as it’s always daunting moving away from what is familiar to you, but you are being encouraged to follow your own path.

The only caution that comes with Herne is if you find you are constantly changing external circumstances, when it’s an inner blockage. For instance, changing jobs at the first setback, not sticking with relationships if the going gets a bit tough, constantly having new friends and interests, but finding that your enthusiasm cools rapidly. Make sure you are changing the right things, and not just moving the old play to a new theatre with a different cast.

Quick Tomato & Lentil Dahl…for one!!

Quick Tomato & Lentil Dahl

Ingredients:

150g lentils, washed thoroughly
300ml vegetable stock
Half an onion, chopped
Couple of cloves of garlic, minced
200ml tinned tomatoes
1 tsp curry powder
Half tsp ground ginger
Juice of half a lemon
Salt & Pepper

What to do:

Put lentils, stock, onion and garlic into a saucepan. Bring to the boil then reduce to a simmer. Cook for 12 minutes.

Add the tomatoes, curry powder and ginger. Stir well, bring to the boil again and simmer for another 10-15 minutes.

When the lentils are completely soft, add the lemon juice and stir well.

Season to taste.

Courgette & Pesto Pasta…for one!!!

Courgette & Pesto Pasta

Ingredients:
2 tbsp olive oil
Half a courgette, grated
Half a small onion, chopped
Couple of cloves of garlic, minced
2 tbsp green pesto
50g spaghetti
Salt & pepper to taste

What to do:
Heat the olive oil and fry the onion and garlic over a medium heat for about 5 minutes until softened.

Add the courgettes and fry for another 2-3 minutes.

Stir in the pesto and salt and pepper. Mix well.

Meanwhile, cook the pasta according to the packet instructions. Drain and return to the pan.

Add the courgette mixture to the pasta, stir well and serve.

Mashed Broccoli with Mushrooms and Chickpeas

Ingredients:
300g broccoli, cut into florets
2 tbsp olive oil
Couple cloves of garlic
50g mushrooms, sliced
100g chickpeas, drained and rinsed
Salt & pepper to taste

What to do:

Put the broccoli into a pan of boiling water and cook for about 10 minutes. Drain and mash with a fork.

Saute the mushrooms and garlic in a frying pan over a medium heat for 5 minutes or so.

Add the broccoli and chickpeas to the pan. Stir well and heat through.

Season to taste.
